
a wholesome eggless muffin, especially good for "elevenses" - that wonderfully hobbit-y inbetween breakfast and lunch meal. you will need:
1 apple peeled and grated
1 cup wholewheat flour
1/2 cup oats
1/2 tsp cinnamon
1 tsp baking powder
1/2 tsp baking soda
1/2 cup chopped walnuts
1/4 cup brown sugar
1/4 cup olive oil
1/2 cup sour cream
1/4 cup milk
1/2 tsp apple cider vinegar
handful of muesli or granola to sprinkle on top
mix all the dry ingredients together including the grated apple. in a separate bowl whisk together cream, milk, oil, sugar and vinegar. Fold wet mixture into dry, mix until combined. Spoon mixture into well greased or lined muffin tins, sprinkle with granola and bake for 20 minutes in a hot oven 190'c or until golden and cooked through.
(makes about a half dozen big muffins)
